So much on my mind, so many problems..with no solutions that won’t hurt others. So what do I do instead…I watch this.
This is my absolute favorite movie. I love the song too. But I better get my sorry butt to bed and force myself to sleep. Tomorrow morning will come fast and I have to be ready for the morning chaos. Baking this year is turning out to be a chore made in hell. How in the hell can you mix, spoon, bake, take off the trays to cool, while holding a screaming baby, and trying to keep the other ones fingers out of everything? Dealing with a million phone calls from back home about my dad dying, dealing with the roofer fixing the roof, etc etc.
God help me. Better yet..you all help me. Send me your favorite cookies…homemade of course Aww heck, I know I know, wish in one hand, shit in the other and see which one is heavier right? hahahaha. Can’t blame me for trying.
I started my cookie baking today. I found out that there are several things I forgot to pick up, including the baking soda, baking powder, and now add to the list, condensed sweetened milk, that I need to make the miracle bars. I had one can already here so I was able to make one batch, but when I put the second batch together, and ready to pour the sweetened milk over the top, I discovered I don’t have it. So I put the pan aside and will have to get to the store to buy my missing ingredients. I’m turning into a ditz.
I’m going to make Eva’s tea cookies next. They look simple and really good. I think I have all the stuff I need to bake them. Either way, I have to go to the store. Maybe I can get Dr. Corny to stop for me and bring them home. That would be nice. Maybe he will tell me I need some ellipticals. The backside is getting rather large these days.
1. In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
2. Preheat oven to 375 degrees F (190 degrees C).
3. On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
4. Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting.

Russian Tea Cakes

Prep: 20 min; Bake: 10 to 12 min per sheet; Cool: 10 min
1 cup butter or stick margarine, softened
1/2 cup powdered sugar
1 teaspoon clear vanilla extract
2 1/4 cups all-purpose flour
3/4 cup finely chopped nuts
1/4 teaspoon salt
Powdered sugar
1. Heat oven to 400°.
2. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.
3. Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.
4. Bake 10 to 12 minutes or until set but not brown. Immediately remove from cookie sheet to wire rack; cool 5 minutes.
5. Roll warm cookies in powdered sugar; cool on wire rack 5 minutes. Roll in powdered sugar again.
*Do not use vegetable oil spreads.
**Do not use self-rising flour

Right after Thanksgiving I am going to attempt to bake Christmas Cookies this year. I say attempt, because of the little ones.
I figure if I can make the doughs while they are sleeping each day, then I can bake them while they are awake. I’m hoping it turns out ok.
The problem is, I seemed to have lost my Christmas Cookie recipes. Must of happened during the move from PA to FL. I have searched high and low for the one recipe book that I had that was also packed full of pieces of paper that had so many recipes hand written on.
So, help me out here, share your favorite holiday cookies and recipe. Simple is good. Tastier is even better
